A Royal French Legacy

The art of spit-roasting dates back to 1248, when King Louis IX organized the Guild of the Oyers (Goose Roasters) in Paris. In 1509, it became the Rôtisseurs guild under Louis XII. By 1610, King Louis XIII granted them a royal charter and their iconic blazon (coat of arms):

• Crossed turning spits

• Four larding needles

• Flames of the hearth

This emblem symbolized excellence, craftsmanship, and the fire that turns ordinary meat into something extraordinary.

After the guild was dissolved during the French Revolution, it was beautifully revived in 1950 as La Chaîne des Rôtisseurs by a small group of individuals, including a professional rôtisseur and a specialist in spit-roasting equipment. The modern emblem (shown above) keeps the historic shield at its heart, encircled by two chains representing professional and amateur members united in their love of great roasting.
